Ingredients:

Baked Chicken Burritos:

1 Recipe Slow Cooker Mexican Chicken

6 burrito size tortillas (I prefer raw/undercooked tortillas) *

1 c shredded sharp cheddar cheese

olive oil or nonstick cooking spray

Cheesy Green Chili Sour Cream Sauce:

2 tbsp olive oil

1 tbsp butter

3 tbsp flour

2 c low sodium chicken broth, warmed

1/2 tsp cumin

1/4-1/2 teaspoon salt

1/4 tsp pepper

1/2 c sour cream

1/2 4 oz. can mild chopped green chillies, or more to taste

1/2 c shredded sharp cheddar cheese

Hot sauce to taste (optional)

Optional Toppings:

Tomatoes

Avocados/guacamole

cilantro

salsa

tortilla strips or chips

Directions:

Step 1: Refer to the directions provided on the package of the Mexican Chicken. Remove any excess liquid\sauce from the Mexican Chicken.

Step 2: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 3: Line with aluminium foil on a baking sheet.

Step 4: Top each tortilla with 1/2 cup of the filling, sprinkle a generous amount of cheese, and then roll it up.

Step 5: Arrange the burritos onto a baking rack and apply olive oil on all sides.

Step 6: Cook the burritos at 400 degrees F for about 20 minutes or until they turn golden brown.

Step 7: Broil for a few minutes or until done to your preferred crispiness.

Step 8: In the meantime, place a saucepan on the stove and turn the heat to medium.

Step 9: Add butter and allow it to melt.

Step 10: Add the flour. Stir and cook for about 3 minutes while stirring continuously.

Step 11: Turn the heat down to low and add the chicken broth a little at a time. Make sure to whisk every addition.

Step 12: Add the spices and allow the mixture to simmer for about 2 minutes.

Step 13: Remove the saucepan from the heat and add in the cheese, sour cream, and green chilis. Stir until well combined.

Step 14: At this point, you can add the hot sauce if you prefer.

Step 15: Top each burrito with the sauce and your preferred toppings.

Step 16: Serve and enjoy!
