Ever heard of goulash? Goulash is a delicious soup made with both meat and veggies. It is seasoned with paprika and other
spices to make it even tastier!
The dish has a Hungarian origin but has become a favorite in other parts of Central Europe and generally the entire continent.
There’s something about European cuisine that’s so attractive and well, if it has attracted such love, then you know it’s delicious, something that you have to try if you’re a fan of trying out foods from a variety of countries.
There are different variations of goulash but in this article, we share an easy-to-follow recipe of Mom’s Goulash. This particular recipe is an important part of my childhood and has always held a place in my life. My mom used to make it for me when I was growing up, and now I make it about twice a month.
Asides from the amazing taste of Mom’s Goulash, the best part about this recipe is that it does not require too many ingredients and so working on it is faster too.
Mom’s Goulash has an estimated 450 calories. The good news is that you can eat it if you’re lactose- intolerant or if you’re on a diabetic diet. The bad news is that you probably shouldn’t prepare this meal – without tweaking the recipe – if you’re on a vegan or vegetarian diet. It also fits in nicely with a keto-diet and several weight loss meal plans.
1/2 lb macaroni
1 1/2 lbs ground beef
1 large onion, diced garlic salt, pepper, chili powder, & hot sauce to taste
2 (14.5 oz) cans whole stewed tomatoes, undrained
2 tablespoons ketchup
Tomato juice as needed
- Cook the macaroni to al dente according to package directions. While it’s cooking, brown the ground beef and onion together in an extra-large skillet or in a Dutch oven.
- Drain and season with spices to taste. In a large bowl, mash tomatoes with potato masher and add to beef along with the ketchup.
- Drain macaroni and add to the beef mixture, stirring well. Taste and add additional seasoning as needed.
- I didn’t need to add any tomato juice to mine, but if you like yours very juicy you can add as much tomato juice as you like. You can also add it to your leftovers, which I would also recommend, because the noodles tend to soak up all the juice with time.
Cooking tips that will help in weight loss
- Go for lean meat
For this Mom’s Goulash recipe, you will need ground beef. However, you can easily replace this with ground chicken or turkey. This will help cut down the calories.
- Clean your vegetables properly
Cleaning your vegetables – like onions – thoroughly will help you remove residues of pesticides which may make it more difficult for you to burn calories. The pesticides are pollutants that cause slow metabolism. Scrub your onions as well as other vegetables you will be using for about 30 seconds, in order to prevent this, and to see to it that any pesticides left on them are eliminated. Another great solution is to buy organic vegetables instead as these do not contain pollutants in high concentration. Proper rinsing of vegetables also helps to cut down calorie intake and maintain weight loss.
- Keeping the fat
For a lot of people trying to lose weight, banishing ingredients in the recipe that have high calorie count or fat might seem like the right thing to do. However, this might not be the case. Fat actually takes more time to digest meaning you stay fuller for a longer period. These ingredients also add more flavor to the dish, thus promoting your level of satisfaction. You will therefore not experience frequent hunger pangs. So instead of removing meat entirely from the recipe, you can replace with lean meat such as chicken or turkey (except you’re on a vegan or vegetarian diet).
