HERB COATED SALMON IN PUFF PASTRY

Feel free to add more ingredients to this very easy recipe if you prefer! I have listed all the things you need to do so just follow them step by step and you are good to go! These heavenly treats are best served hot with the sauce. Oh, my, you are so in for a treat! Serve them with your favourite pasta and coffee, and you have yourself a meal to remember! Ingredients:

4 ounces salmon fillets, skinless

2 sheets puff pastry

2 cups frozen spinach, thawed and squeezed to discard any excess water

egg for egg wash

Sauce:

2 tbsp Dijon mustard

2 tbsp mayonnaise

1/2 lemon, squeezed

2 tsp honey

2 tbsp chives, chopped

3 tbsp dill, chopped

3 tbsp parsley, chopped

2 tbsp tarragon, chopped

Directions:

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Unroll the sheets of puff pastry slice each into two.

Step 3: Top each slice of pastry with a piece of salmon.

Step 4: Top each salmon piece with the sauce.

Step 5: Top the sauce with about half a cup of spinach.

Step 6: Brush the sides of the pastry with the egg wash, then fold them.

Step 7: Brush each top with egg wash, then arrange them into a baking sheet.

Step 8: Place the baking sheet inside the preheated oven and bake for about 20 minutes or until golden brown.

Step 9: Add all the ingredients for the sauce into a mixing bowl. Stir until well mixed.

Step 10: Serve with the sauce. Enjoy!
