DELICIOUS STUFFED POTATO PANCAKES

I love potatoes that is why instead of just simply frying it like the usual, I looked for recipes that will bring it to the next level. I am so glad that I was able to find an awesome recipe that became my favorite! This will have a place in your heart once you get a bite of it. I use beef by the way because it was the available meat in my fridge but feel free to use chicken or pork. I think pretty much any meat will be great with these pancakes. I am thinking of using fish next time. I know that it’s going to be as good as beef maybe even better! Feel free to experiment a little!

Ingredients: 

8 medium (2-1/4″ to 3″ dia, raw)s potatoes, peeled and shredded

¼ cup all-purpose flour

½ teaspoon baking powder

3 large eggs eggs

1 pinch salt and black pepper to taste

Filling:

½ pound ground beef

½ onion, grated

1 pinch garlic salt

1 egg

¼ cup bread crumbs

2 teaspoons vegetable oil

Directions: 

Step 1: In a medium mixing bowl, add in the potatoes, 3 eggs, baking powder, salt, and pepper. Stir until well mixed.

Step 2: In another medium mixing bowl, add in the ground beef, 1 egg, bread crumbs, onion, and garlic salt. Stir until well mixed.

Step 3: Place a skillet on the stove and turn the heat to medium-low.

Step 4: Add in oil and let it heat through.

Step 5: Spoon the potato mixture and put it in the skillet.

Step 6: Flatten the pancake and add 2 teaspoons of the beef mixture on top. Spread the mixture until it covers the pancake entirely.

Step 7: Fry for 5 minutes or until the color of the pancake turns golden brown.

Step 8: Turnover the pancake and fry for another 1 to 2 minutes or until it turns golden brown as well.

Step 9: Place the Stuffed Potato Pancakes on a clean plate.

Step 10: Serve and enjoy!
