1 1/2 pound boneless, skinless chicken breasts, cut diagonally into cutlets

3 tablespoons grapeseed oil

flour, for dredging

salt and pepper, to taste

For the Mushroom Sauce

8 ounces mushrooms, cleaned and thick-sliced

1 medium onion, thinly sliced

2 tablespoons butter

1/2 c white wine or chicken broth

1 c heavy cream

1/2 c shredded Parmesan

salt and pepper, to taste


Step 1: Use a mallet to pound the chicken breasts.

Step 2: Season the chicken breasts with salt and pepper.

Step 3: In a mixing bowl, add the flour.

Step 4: Coat each chicken breast with flour.

Step 5: Place a large pot on the stove and turn the heat to medium.

Step 6: Add oil and allow it to become hot.

Step 7: Add the chicken breasts and cook each side until golden brown.

Step 8: Remove the chicken from the pot onto a clean plate.

Step 9: In the same pot, add butter and allow it to melt.

Step 10: Add the onion and saute until a bit caramelized.

Step 11: Add the wine and mushrooms. Stir and cook until well mixed and translucent. Sprinkle salt and pepper to taste.

Step 12: Add the Parmesan cheese and cream. Stir until well mixed.

Step 13: Turn the heat down to low.

Step 14: Put the chicken back to the pot and stir until well coated with the sauce.

Step 15: Simmer everything until done.

Step 16: Serve and enjoy!
