1 1/2 c flour
3/4 c sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon pumpkin pie spice
1 1/2 c pumpkin puree
1/4 c butter, melted/cooled
1 teaspoon vanilla extract
CREAM CHEESE FILLING:
4 ounces cream cheese, softened
1/2 teaspoon vanilla extract
1 teaspoon flour
2 tablespoons sugar
1 teaspoon milk
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Line with parchment paper a muffin tray.
Step 3: Add the flour, baking powder, baking soda, pumpkin spice, and sugar into a large mixing bowl. Whisk until well mixed.
Step 4: In another mixing bowl, add the melted butter, egg, pumpkin, and vanilla. Beat until well combined.
Step 5: Transfer the wet ingredients into the bowl with the dry ingredients and stir until mixed.
Step 6: Fill each muffin cup with the batter.
Step 7: Meanwhile, add all the ingredients for the cream cheese filling in a large mixing bowl. Stir until well mixed.
Step 8: Transfer the filling into a piping bag and dollop each muffin cup with it.
Step 9: Place the muffins inside the preheated oven and bake for 20 minutes or until done.
Step 10: Remove from the oven and allow the muffins to cool at room temperature for at least 3 minutes.
Step 11: Serve warm and enjoy!
