CARIBBEAN CHICKEN WITH PINEAPPLE-CILANTRO RICE

This meal is very refreshing to eat! I love how the pineapples and chicken compliment very well with each other. This recipe is one of the best and easiest that I’ve tried so far. It would only take you about an hour to prepare and cook everything. It’s worth the wait. Enjoy!

Ingredients:

1 tablespoon light brown sugar

1 teaspoon ground black pepper

1 teaspoon dried thyme

1 teaspoon ground cumin

1 teaspoon garlic salt

1 teaspoon paprika

½ teaspoon chilli powder

½ teaspoon ground nutmeg

4 breast half, bone and skin removed (blank)s skinless, boneless chicken breast halves

1 cup uncooked white rice

1 ½ cups water

1 (8 ounces) can sliced pineapple in juice, drained – divided

2 tablespoons chopped fresh cilantro

1 teaspoon olive oil

1 pinch garlic salt

1 pinch ground black pepper

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: In a medium mixing bowl, add brown sugar, thyme, cumin, 1 teaspoon of black pepper, paprika, 1 teaspoon of garlic salt, nutmeg, and chilli powder. Stir until well mixed.

Step 3: Rub the chicken breasts generously with the seasoning and place them in a prepared 9×9-inch baking dish.

Step 4: Sprinkle the remaining seasoning over the chicken for more flavours.

Step 5: Place inside the preheated oven and bake for 30 minutes or until no more juices are coming out. You can also use an instant-read thermometer. It should read 70 degrees C or 160 degrees F.

Step 6: Place a saucepan on the stove. Add rice and pour in water.

Step 7: Turn the heat to medium-high and allow it to boil.

Step 8: Cover then reduce to medium-low heat and simmer for 20 to 25 minutes or until the rice is nice and tender.

Step 9: Slice the pineapples into half. Add into the rice together with the olive oil and cilantro. Sprinkle with black pepper and garlic salt to taste.

Step 10: Transfer the rice mixture on a clean serving plate. Place the rest of the pineapple slices on top.

Step 11: Serve with the baked chicken. Enjoy!
